Protein Packed Super Green Crispy Gnocchi

 

Wholesome, vibrant, and irresistibly creamy, this protein-packed super green gnocchi is a must-try! Golden gnocchi served with a velvety spinach, pea, and silken tofu sauce makes it as healthy as it is indulgent. 

Serves 4

Ingredients

For the sauce
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 300g silken tofu
  • 150g baby spinach
  • 200g garden peas
  • 1 lemon
  • 2 tbsp nutritional yeast
  • salt and pepper to taste
For the gnocchi
  • 3 tbsp olive oil
  • 2 garlic cloves
  • 500g gnocchi
  • salt and pepper to taste
To serve
  • fresh basil
  • plant-based parmesan
  • extra virgin olive oil
  • black pepper

Before you start

2 frying pans | Food processor | Kettle boiled | Colander

Instructions

 

Prepare the sauce

  1. Peel and grate the garlic
  2. Zest and halve the lemon
  3. Warm the olive oil in a frying pan, add the garlic and lemon zest and fry for 30 seconds
  4. Add the silken tofu and fry for 2-3 minutes, stirring constantly to break up the tofu
  5. Add the peas and stir for 2 minutes
  6. Add the spinach, squeeze over the lemon juice (catching any pips in your free hand), sprinkle over the nutritional yeast and stir until the peas are cooked and spinach is wilted
  7. Take the pan off the heat and leave to cool to room temperature
  8. Add the contents of the pan to a food processor and blitz until smooth
  9. Set to one side
Prepare the gnocchi
  1. Peel and grate the garlic
  2. Warm the olive oil in a the second pan over medium heat, add the gnocchi and stir for 3-4 minutes
  3. Add the garlic and stir for 2 minutes
  4. Reduce the heat to very low
Finish and serve
  1. Pour the sauce into the frying pan, warm up over high heat and stir for a couple of minutes, you may need to add a splash of water if the sauce thickens too much
  2. Spoon the gnocchi into a pasta bowl, finish with basil, plant based parmesan, extra virgin olive oil, black pepper and salt if you would like
