Veg Cajun “Dirty” Rice

 

This quick and easy to make recipe is a must have. packed full of flavour.

Serves 3

Ingredients

  • 2 tsp avocado oil
  • ½ onion
  • 1 green bell pepper
  • 2 stalks celery
  • 2 cloves garlic
  • 3 soyrizo (vegan chorizo)
  • 420 g / 14.6 oz brown rice
  • 1 Tbsp Cajun seasoning
  • 2 tsp ground fennel (or sage)
  • 1 tsp ground cumin
  • 960 ml / 33 fl oz vegetable broth (low sodium)
  • Sea salt
  • Pepper

Steps

1. Set a carbon steel skillet on medium heat. Once hot, add oil, onion, bell pepper and celery. Cook for 2 – 3 minutes until fragrant and the edges begin to brown on the onion and bell pepper. Add the garlic and cook for an additional 1 minute.

2. Add the sausage to the skillet and chop it up while it cooks to spread it out in the skillet. Cook for another 2 minutes, then add the brown rice.

3. Sprinkle in the seasonings and mix well, ensuring that every grain of rice is covered in oil and seasonings. Add the vegetable broth, bring to a light simmer, then reduce the heat and cover and cook for about 30 – 35 minutes, until all the liquid has been absorbed by the rice.

4. Flake the rice with a fork and season to taste with sea salt & pepper.
